My mother got this recipe off of a tub of desert topping years ago but I have adapted it suit someone who needs a sugar free desert. This could not be easier! You need:
1 pint of no sugar added vanilla ice cream (slightly thawed)
1 reduced fat graham cracker crust
1 tub of sugar free whipped topping (regular size, thawed)
8 oz of frozen strawberries (or any kind of frozen fruit just be sure it is not the kind in frozen with sugary goo)
2 to 3 tablespoons of water
First puree the strawberries, or your chosen fruit, with the water. You need enough water so that the fruit is the consistency of a frozen juice concentrate. Once done mix 6 ounces of the fruit puree with the whipped topping and ice cream.
Pour this into your pie shell and freeze for at least 2 hours or until solid again. Easiest desert to make and it can be done weeks ahead. Enjoy!
There are a lot more frozen fruits to chose from now then there were 20-30 years ago (when this recipe first came out), so you could use any frozen, no-sugar added fruit. It’s a very easy and refreshing summer desert.
