Veggieloaf and Meatloaf

Every once in awhile my mother-in-law comes to visit us which is marvelous because our families live in another state and I have no help with the werewolves until she comes. So when she comes I try to treat her to food that she would not normally fix for herself. She is a vegetarian and can’t eat hard cheese either so I invented this unmeatloaf for her to have on the nights when everyone else is having meatloaf. Use any veggies that you like. I had mushrooms, a bell pepper, a squash, and a zucchini so that is what I used. Just be sure that after cooked you have a cup of veggies. You will need:

Veggies of your choice diced small

1 cup of minute brown rice (cooked)

½ cup mashed beans (any kind or you can use refried beans)

1 tablespoon of steak seasoning

1 teaspoon of dried onion

1 tablespoon of steak sauce

1 tablespoon Worcestershire sauce

1 ½ cups of bread crumbs (if using the egg then add another ½ cup)

1 egg (optional)

2 tablespoons of olive oil

Preheat oven to 350 degrees. Cook your diced veggies in 1 tablespoon of olive oil until very soft then place in a bowl. Mix the rice, beans, and the seasonings into the veggies. Add the egg if you are using it and the bread crumbs. The crumbs I used were fresh so if you are using really dry crumbs you may need less so add a little at a time until the mixture holds together. Brush some of the remaining olive oil onto a sheet pan then form the mixture into a small loaf shape. I do these as individual loaves because they don’t slice well. You can also make this into patties for veggie burgers. Both forms freeze well for cooking later. Brush the loaves with more olive oil on the top and cook for 20 minutes or until browned. Enjoy!

Now on the nights I make my meatloaf the werewolves come into the kitchen with snouts twitching growling about the smell of bacon so I make my meatloaf big. Leftovers make really good sandwiches when there are leftovers. My thoughts on meatloaf are that it is meant to be a way to extend whatever meat you have so use whatever you like. I like to use two different types to give some more flavors to the loaf but use what you have. I used some turkey and some sweet Italian sausage for mine. You will need:

1 ½ pounds of ground meat (beef, turkey, pork, sausage)

1 pound of thick cut bacon

1 egg

1 teaspoon dried onion

1 tablespoon steak seasoning

1 tablespoon Worcestershire sauce

1 tablespoon steak sauce

1 cup bread crumbs

No veggies in this one. I mean who are we kidding it’s meat wrapped in bacon! Nothing remotely healthy about it so have some nice veggies on the side. Preheat oven to 350 degrees. Mix the ground meat with the seasonings and the egg. Add the bread crumbs a little at a time until the mixture hold together. Line the bacon up on a sheet pan so that one side is longer than the other.

Form your loaf on top of the bacon.

Begin folding the bacon over the meatloaf.

Flip the loaf so that all the bacon ends are on the bottom.

Cook in the oven for 1 hour then broil the meatloaf until the bacon is crisped. Let this cool a little before you slice it up. I like mine with some gravy but the werewolves like it with ketchup.

    I’m not a big meatloaf fan but I’ve never had one wrapped in bacon…almost anything wrapped in bacon is tasty.
