If you like lemon bars and Key lime pie then this is your dream dessert! My oldest werewolf liked this so much that he had 3 of them and ended up with a tummy ache. This is easy to make and you could convert the sugar used to a sugar substitute if you wanted it to be sugar free. I just bought a bottle of Key lime juice and used regular limes for the zest but if you have access to Key limes then you can use those instead. You will need:
6 extra large eggs
3 cups of sugar
1 cup of flour
1 cup of Key lime juice
2 tablespoons of lime zest
½ box or 17 graham crackers
½ cup of butter (melted)
Preheat your oven to 350°. Place the graham crackers in a food processor and pulse until the crackers are down to fine crumbs. Mix in a bowl with the melted butter and then press into the bottom of a 13×9 pan.
Set aside while you make the filling. Using a stand mixer or a bowl and hand mixer combine the eggs, sugar, flour, lime juice, and lime zest together until you can’t see any specks of flour. Pour over the crust and bake in the oven for 35 minutes or until the filling is set.
Allow to cool completely then dust with powdered sugar. You can top it with whipped cream if you like.
