Kid-friendly Whole Grain Pancakes

My smallest werewolf got a nasty virus and has not been eating well so I thought I would make some pancakes which are usually a hit around here. Luckily for me they like whole grain pancakes so I am sharing a super easy recipe for mine. Keep in mind this is a doubled recipe because I am feeding four hungry guys so you can half it if you need to. You will need:

2 packets of instant oatmeal (I like to use apple cinnamon but use any variety)

1 cup of flour (you can go all the way and use whole wheat here)

2 tablespoons of sugar

½ teaspoon of salt

2 teaspoons of vanilla extract

4 tablespoons of oil (or substitute plain applesauce which is especially good with the apple cinnamon oatmeal)

1 ½ cups of milk

2 large eggs

Mix all of the above ingredients together and let it stand for a few minutes so the oats have a chance to soak up some of the liquid.

Pour about ¼ cup of batter onto a heated nonstick surface and once you get a lot of bubbles then flip. Top should be nice and brown like this.

Continue until all of the batter is used up. Hope you like these!

    I hadn’t thought of using instant oatmeal packets but it’s a really good idea. Have you every made gingerbread pancakes with hot applesauce poured over them?
