Lemon Merigue Cupcakes

I am a huge fan of citrus-flavored desserts so the other day I was thinking about lemon meringue pie and wondering how I could make that into a cake or a cupcake. I like cupcakes not because they are in right now but because they don’t require me to really commit to decorating. Doing a whole cake means that I have to make it look really pretty which I don’t have the patience for. With a cupcake all I really need is to frost the top and sprinkles are optional. I have to be lazy about something or you guys would really hate me! These are entirely from scratch because, as I stated before, it is just silly to pay somebody to premeasured flour, sugar, baking powder, and salt for you. Don’t even get me started on the chemicals they can sneak in there too. These are easy so relax. You can easily make these as a cake if you do like to decorate. For the cupcakes:

2 ¼ cups of all-purpose flour

1 cup of sugar

½ cup of butter (melted)

1 ¼ cups of lemonade (2 tablespoons of frozen concentrate mixed in water)

3 ½ teaspoons of baking powder

1 tsp salt

3 teaspoons of lemon extract

3 large eggs

Zest and juice of 1 lemon (ended up being 2 teaspoon juice)

3-4 drops of yellow food coloring

Preheat the oven to 350° and place cupcake cups into 2 muffin tins (12 cup tins). Just dump everything in a bowl and mix on low for 1 minute then on high for 3 minutes. Fill your cupcake cups ¾ of the way up and place in the oven for 20 minutes or when a toothpick inserted into the center comes out clean. While these cool make your frosting. You will need:

1/3 cup of butter

3 cups of powdered sugar

1 jar (7 oz) of marshmallow cream

1 teaspoon vanilla

2 tablespoons of milk

Beat together the butter, sugar, vanilla, and milk until combined then gently mix in the marshmallow cream. Frost the cupcakes and serve! These turned out really good but next time I might take some of the lemonade and drizzle it onto the warm cupcakes for an even more intense lemon flavor. One of my better ideas!

    I especially like using marshmallow cream in the frosting, yum!

      It gives the frosting more of a meringue texture.
