Cherry and Ginger Muffins

I adore muffins because they are so easy to make and the flavors are endless! Another plus is that the wee beasties in my life love them. I am using crystallized ginger in this and it should be easy to find in most spice sections. If you have trouble you can visit Penzeys online and I guarantee they have it. I am lucky enough to live near a city that has a Penzeys so I get almost all my spices there. The cherries I used were just the Target brand and I love them but any dried cherry that you like will be fine. For the streusel topping you can easily substitute toasted oatmeal for the pecans if you have a nut allergy or leave it off altogether. For the topping:
(This will make tons of topping but you can keep it in the freezer for next time.)
2/3 cup brown sugar
2/3 cup chopped pecans
2/3 cup flour
¼ teaspoon salt
5 Tablespoons butter
Mix this together with your fingers until it is crumbly.

For the muffins:
1 ½ cups of unbleached all purpose flour
½ cup whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
3 eggs
½ cup sugar
1 stick of melted butter
1 cup plain yogurt
1 teaspoon rum flavoring (if you don’t have it use vanilla here)
1 cup dried cherries
¼ cup crystallized ginger

Heat oven to 350° and spray or line with foil liners a 12 cup muffin pan. I just sprayed mine. Mix the flours, baking powder, baking soda, and salt together. Mix in the cherries and ginger. Whisk the eggs in a separate bowl with the yogurt, sugar, and the butter. Add the wet to the dry and just stir enough to combine. Do not over mix this or you will get gummy muffins! Fill the muffin pans ¾ full of the batter and top with the streusel. Bake for about 20 to 25 minutes or until a toothpick comes out clean. Hope you enjoy them and share this blog!
